Garden Fresh Roasted Vegetables

Do you have Radishes, Turnips, Peas and Asparagus in your Garden?
I do – and didn’t know what to do with them – until now!
I have an abundance of radishes and peas in my garden and we can only eat so many of them fresh. Then I found out you can roast radishes! Who knew – only ever heard of eating them fresh.
So I cut up and threw in a baking dish – 3 radishes, 1 turnip, 6 pea pods (left whole) and 3 small stalks of asparagus. All fresh from my garden! I kept the amounts small because only my husband and I were eating and we weren’t sure if we would like it…but we did!
I added a couple of pats of butter and a little seasoning salt.
And then I baked at 400 degrees for about 10-15 minutes.
I forgot to take a picture of the dish before we ate it!! But here is a pic of what was left in the baking dish! Not very pretty, but very delicious!
Don’t be afraid to experiment in the kitchen. I didn’t follow a recipe for this – I just made it up with what I had fresh from the garden and in the pantry.
